It comes down to what you want.

If you want her to stay without commitment and she wants to be exclusive, you could probably wiggle around it using tactics but it's going to crash and burn eventually. If you want to risk the headache, go for it.

If you want to spin plates, be honest with her. It'll suck for a while but save you the hassle in the long run.

Options: Commit to her in an LTR- seems like she's be a solid woman to have around. Or wait until she breaks and leaves. Inevitably that will happen. Better to make a decision now on your terms, then to come back from a lower position later.

To win you have to drop some plates. Cooking, everytime Sex and same hobbies doesn't seem so super special in my opinion to go for an exclusive relationship. But after all it's your life and your decision.

I would tell her that I won't be exclusive with her. If you're not convinced there is no issue with saying no. You don't live on this planet to sacrifice your life to make somebody else happy than you.

Since you've been clear about the relationship, she is self-selecting out of it.

"Not enough into you to be exclusive". You could have come up with a better rejection than that, Maybe one having to do with your lifestyle, instead of how much into her you are.

Buttslam your main plate at her place, then say you need a minute to clean up but actually sneak out the bathroom window and go hard no contact, delete and block on all social media. Ignore her completely for 3-5 days minimum. If she is serious about you, she will come crawling back to you in a few days and will agree to any demands.
