I think she said lol because of the way you said it, me, you, and coffee. She doesn't seem to be laughing at your advance. I'd just say "ya?"

She may have been amused, and unsure how to proceed. If you decide to use the line again with someone else add on "You, me, and coffee. My favorite spot is X, let's meet there on Tuesday." This shows that you want to see her, introduces a proposed plan (but not in the form of a question) - and gives her room to suggest a time. The other woman may have been unsure what else to say. Don't 'hint' at getting together, because if the woman isn't outgoing, then she may be too shy to propose a plan herself. If you're going to take the lead - then do so, don't drop suggestive crumbs with no follow through.

If you hard next her for what could easily be uncertainty/awkwardness, then it's a knee-jerk reaction and not an informed decision.

She's not blown away by your profile/pictures/whatever. This is just her saying she's open to you putting forth a bit more effort. You haven't demonstrated that you'd be fun to hang out with yet. You're not a woman, you don't have the option to just expect people to want to hang out with you, sorry for your luck but you have to act valuable before you have value.
