The "why not" was a shit test. Giving her a non-answer passed it breaking her frame of feeling like she's the prize, and the "good answer" is just her hamster trying to recover by playing it off.

She's used to people answering with, 'Because I am going to make it worth your while' in some way shape or form. Guys will offer to pay for the coffee, use some bullshit subtext to meet like 'studying', and otherwise show that they are willing to jump through hoops for her.

You gave her an answer she wasn't used to, so you get unpredictable/exciting points. You also showed her that you're not around to pander to her needs all of the time, which people perceive as implying you are a valuable person with a valuable life.

In short, you held your frame. You wanted to go on a coffee date, and you weren't going to play her games to get there. This shows stability, dominance, and inner strength, which are all incredibly attractive traits for a man to have.

Granted, you still have plenty of time to fuck it up by failing to hold frame down the line. In a sense, you have merely avoided failure as opposed to having achieved success. Your game has 'worked' when you meet your goals, be it fucking, hooking up, going on a date, enduring an LTR, etc.

She might have been already interested in you, and "Why?" was a shit test. She might have even meant it playfully, though that wouldn't come through over text. "Good answer" leads me to believe it was a shit test.

In any event, you passed. But, particularly if it was a playful shit test (e.g. she was being bratty), and she was already interested, the bar was probably pretty low. It's possible she would have accepted any reason you gave that merely didn't come off as needy.
