Speak with passion about the things you like.

A lot of people shy away because they don't want to be judged for their hobbies.

I'm a part time video game caster, and I don't shy away from talking about it. Sometimes people have questions, but if you speak confidently about it, you'll be fine. And if they really can't get over it, fuck them.

The people I want to be around are the people who can listen to something they are unfamiliar with and be interested.

Don't steamroll the conversation of course, but don't not talk about something just because you think it's not a common thing to be interested in.

Remember to be physical and touch her in an overt way, like holding her hand or caressing her thigh. As an introvert I know it's very easy to get wrapped up focusing on conversation and forgetting about this which is even more important.

Hopefully the way you approached her is in-line with the energy of the date. A lot of times guys will come across super energetic and outgoing when they first meet a woman (because that's what the majority of pua videos preach), and during each consecutive date they become more and more comfortable, and become more and more like themselves. Then the woman discovers you're not the guy she initially met. Imo, coffee dates are always awesome if you can bounce from there to a near-by venue.
