Lots of good youtube videos to learn the Melbourne Shuffle... Very popular (think LMFAO's 'Every Day I'm Shufflin'), easy to learn the basics (anyone can learn the Running Man and the T-Step), and once you have those basics down it's not hard to pick up some very unique looking adaptations, and have a lot of fun doing it.

Edit: I think this is the first video I ever watched to learn the running man and the T-step. Breaks it down pretty well.

Edit 2: This is my favorite shuffling tutorial. A little more advanced stuff than the first one, but breaks everything down amazingly.

Whatever you do, just put yourself into it 100%. Girls aren't expecting every guy to be Justin Timberlake. The ability/confidence to dance just for your own enjoyment and laugh at yourself if you suck is attractive.

I used to know a guy who was a bit funny looking and danced like an idiot, but he was so confident girls were all over him.

Just go out to clubs. Watch people dance and steal the moves you like. It helps if you go see DJs you like at clubs you like. I go to clubs 2 or three times each week, but I don't fuck with mainstream clubs or top 40 music, so when I find myself in a mainstream club I'm a little uncomfortable at first and I probably don't look as natural.

Here are my two rules for dancing in clubs:

1) Stay on beat (which is really simple in club music)

2) Do whatever makes you happy

As long as you're on beat and looking like you're having fun, you're killing the dance floor, in my opinion. It certainly puts you above all the chumps sitting at the bar and staring into dance floor wishing they knew what to do.

Also, look at other people dancing. If they do something cool, add it to your arsenal.

"Would be a good dance to do" Firstly, you need to make the distinction between "Dance game" and "Dancing". What you're asking for is dancing. Dance game is where you can turn her on, show dominance, control, and that sexy, sassy movement on the floor, OR huge amounts of preselection by getting multiple girls to dance for you.

Also it sounds like you don't even like clubs, but you do like dancing... Why not just game in salsa classes OR start your own thing up?

I wanna learn the charleston and mix it up with the running man. My humour is self-depreciating so I can happily laugh at myself doing this.

Or is the charleston way to gay to the extent that girls would just wanna friendzone me and ask me to go shopping with them?

edit - also, would the charleston just be N/A to all night-game music, adding to my frustration. "No, no, I CAN dance but only if they play 20s music!"
