On the last day you work together let her know (while giving her your number if she doesn't have it) that you've had a little crush on her for a while but wanted to be professional and if she feels the same way to let you know. Smile and say it playfully and casually but also be sincere, like not over the top silliness but not super serious, either. Like in that middle ground it would genuinely be nice but no worries if not kind of way.

Thing is after a year if she hasn't shown signs of interest and you haven't flirted with her at all then pretty much the only chance here is if she had the same perspective as you, ie interested but not going there due to professionalism. So don't get your hopes up super high but if you go for it, the above approach is best.

You should have done something about it before now, anything you do now will be out of desperation and scarcity. She isn't an idiot and will realize this which isn't a good look for you at all.

If you still want to try, be honest and address it. "When you decided to leave, it made me realize that I like you and I'd still want to see you again. Can I take you out for drinks/dinner next week?".

Dude relax, even if she leaves you can still make it happen. I once had a little work crush on this girl who left a job I was at in like late 2016, I quit shortly after in early 2017, then later I accidentally found her on IG and fucked her in 2018! If anything it's probably even better that you're not working together, because now if it doesn't work out there's no pressure. Good luck man! Definitely doable.
