If it isn't too busy (like to the point people are reaching over you to get drinks), sit at the bar; then you have the option of turning your stool toward her, or standing up to "stretch your legs" (just be careful not to loom over her). I think it's also easier to read body language in this scenario than at a table or in a booth. I'm female, btw, and this seating arrangement makes it easier on us too, to show whether we are into you, or not.

Table seating sucks for first/early dates. Always try to get a bar seat...and yeah, that could take a little research. Branch out and find some cool bars that aren't incredibly busy on nights you would typically go on a date, so you can be confident they'll have bar seating. It really makes a big difference, cause you can easily turn your body towards her and you'll probably sit close to each other. Inevitably you make accidental contact (legs/arms brush), you can put your arm on her bar stool if it has a back and turn your body to her...that easily opens the door to more physical touching and eye contact.

Aside from that, having a drink or two, then changing activity/location is a good idea. Find a bar with pool tables or darts or something. Have a couple drinks and see if she wants to play. Makes things more fun and changes the dynamic of the date from forcing conversation to just hanging and having a good time, and also opens the door to more physical contact, negging (give her lighthearted shit for sucking at pool). Oddly enough, pool can be erotic on a date lol

Not saying sitting opposite each other is ideal. However I actually did quite a bunch of table sitting dates (benches full, no benches in the bar she picked in her city). The easiest way to start physical contact table sitting opposite of each other from my experience is taking her hand and ask the story about her rings, bracelets, necklace (most girls wear some), while holding her hand lightly (and see how she reacts to that).

Another one is the how big are your hands game (make some comment: how big are your hands, how thin are your fingers). I always lose this game as I have baby sized hands that always surprise people. After this you can try to interlock fingers and again feel how she responds.

Edit: Strong laughy eye-contact is a super powerful tool when sitting opposite from the girl aswell

Yeah, table sitting is way too formal. Feels like a dinner date without the food?

As many people pointed out you should either sit at the bar or maybe try to put your chair either to the left or right from her.

My home city has lots of places where you can sit on a sofa which is pretty awesome for a first date.
