I leave it at " well, we're dating". It's never offensive. Makes her more than a friend. You're still claiming her which simultaneously she'll like and signifies no it's not cool to hit on her. Doesn't actually lock it down, and most importantly doesn't let someone else decide your terms for you.

If anyone pushes for clarification then I just say " we're not there yet"
