She's mentally stable yet she took 2 weeks out of work, because of mental issues. This breakup hit her like a truck and she really loved the guy. I'm not going to be the guy who asks the girl out when she even herself doesn't know where she stands atm. Its too risky.

She gave you her number, literally ask to get coffee and just chat see where it goes, give her a kiss tell her you know she’s in a weird position with her boyfriend but your here for her. If she rejects you it’s to early for her and she’ll come to you when she’s ready and if she accepts then your golden.

you are friendzoning yourself... as /u/ggbissett posted, invite her in an actual date, game her, touch her, go for her hand and a kiss. Express you know she is in a delicate situation.
And stop texting her except for logistic purpose.
