You can send the pdfs to yourself and then just open them via email. That way, they will just open in Safari, and go back to that window when you want to continue reading. I mean, I doubt someone will check all of your open Safari windows. You can also put the pdfs in iBooks.

There are a few apps that hide media (mostly for porn), but they're probably more trouble than they're worth. I have a cool app that streams movies and mp3s from my computer, but you have to be within range of your wireless router. It's awesome, because it converts movies into iPhone format on the fly. I think it's called something like AirPlay.

Could try the Kindle app? Not sure if that is entirely practical though

What?!? You let people touch your iPhone?!? Nobody touches my iPhone. It never leaves my pocket unless I'm using it.

Put PDFs on your iDisk and access them from there. Nobody will know where they are, they're not actually on the phone, you have to call them up. Or you can email PDFs to yourself (that used to be the only way to get PDFs onto an iPhone).

As for mp3s, just rename them something boring like "Economic forecast for soybean commodities futures" and change the artwork in case someone looks through CoverFlow.

Or just put a damn password on the phone, as Tofu suggests. Or just don't let them touch your phone, as I suggest.
