Quick tip on restaurant girls from a 20 year old who has worked in restaurants since he got his working papers:
Don't try doing this any time but a lunch shift, or a slow dinner shift. Unless you consider yourself a god, don't try picking up a waitress on a busy Friday night in a crowded place, even if she looks and acts happy to your face, she'll be bothered by you wasting her time with any conversation other than "I want food X," or "I want drink X." She's freaking out, running around like a maniac, and cursing you out in the kitchen, and if she does give you her number it's most likely so that you'll stop bothering her.

Being fast really is the key. Be unique, but do it quickly. If she is really attractive, she has probably been getting hit on by a myriad of different guy customers using the same old shit.

I disagree, as a guy who's been serving for awhile now, I always make time for tables I like or tables with hot girls. So if they want to sit and chat for a second I make sure I give them the time of day, not only to affect the tip but also those sort of tables usually help me get rid of some of that "oh shit I gotta get x, y, z for table 31."
Those are just my two cents though.

I think an important part of this is OP was travelling. If you try this at a place you frequently go to, and it goes south, you'll be shitting where you literally eat.

I only commented because some people may think any waitress is approachable, but I know from semi-personal experience (a friend) that asking out the waitress at a place you frequent is not a good idea. Then again, this gives you incentive to try new places.

You need to get "I'm in town for one night" into the early part of a conversation with any girl you're hitting on while on the road. Great lead-in to her asking you questions about yourself... and high potential for a strings-free one night stand.
