While you might get some light touches in on a girl when you first meet her, physical escalation is not the key thing there. Your opener and first conversation are. If you nail your opener and get going well on your initial conversation, then that's usually more than enough for a first time meeting.

If you were going for some sort of insta-date or first meeting f-close, then you might have to think about some minor physical escalation, at least. But honestly, if you're just learning all this and aren't having success at the basics, then trying for this might be needlessly difficult.

If you are going to set something up for later, then no physical escalation is even needed in the first meeting. What's your hurry? There's no timer here when you meet that runs out and magically relegates you to the friendzone if you don't somehow manage to physically escalate far enough in the first meeting.

You don't need to hug someone you just met. If you take this sort of one-size-fits-all approach to cold opening, you're going to alienate girls a lot, as you'll put off the vibe of a guy who isn't paying attention to them or what they want.

What are you bringing to the table here? This is a girl who is in the middle of some work on her laptop, clearly important enough that she was tuning everything out with her headphones. So if you open the interaction by disregarding that she's concentrating on work and comfortably sitting down, to somehow get her unplugged from her work, uprooting her from her chair, and taking her outside away from people and with a stranger...... what are you offering there?

It's TOO much focus on what you want for you, and disregard for what she wants. Bad way to start off.

Instead, what you would want to do is start by integrating. Be one of the people using Starbucks to get work done or whatever: it helps to relate to a girl you're trying to open and connect with. You shouldn't be the guy with nothing to do but sip his drink and scan for girls.
Observe the environment and all the people in it. What people are wearing and doing. All of that gives you material to work with. Funny and awkward things are happening in a place like that with a lot of people. There will be things to comment on.
Chat with the people who work there! Get to know them. Guys and girls alike. The people at Starbucks tend to be encouraged to be friendly too and they're treated well, generally, so it shouldn't be hard to be on first name basis with them quickly. Then you've got conversation soon after walking in, at least until you get your drink. And conversations can pop up with people around you, while you're talking to them: including with girls. Being social like that, makes you more approachable for people around you. Social proof and all that. That in addition to warming you up.

What if she has her laptop or notebook and a table and she's busy doing something with her earphones in her ears?

Smile and say hi. Stop thinking and actively listen to her!! She'll look up and respond in some way. There will be body language and facial expressions. Provided that she doesn't just look right back down and reject you immediately, ask what she's working on. She'll answer. Go from there.

Indirect = more complicated than this shit needs to be. You don't need A Beautiful Mind to calculate the angles in order to open a girl in this situation. You can't counteract it if the girl ultimately doesn't want to interact with you, but trying to plan to counter the girl not wanting to interact, will be a turn-off towards the girls who would otherwise want to interact with you. Which is ironic.

Just open her directly as if she wants to talk. Until she shows you or tells you that she doesn't want to talk.

I once saw a video of a guy showing how he does it. Basically he goes to her, opens with something like: "hey, i just saw you and i thought you looked cute..." squats down in front of her table to not look to threatening, and has a chat with her, with the intent of getting her number, or maybe even to sit down with her.

Don't ask me what the video was titled, all i remember is that he was a british pua coach, marketing himself as being an ugly looking guy who gets the hottest pussy etc. If i remember correctly he was somehow associated with yad.

Sit down in front of her and point to you ear, when she takes out her headphones ask her what she is listening to. Or just be direct and say you just saw her and thought she was cute.

If she leaves her hands and arms on the table you can touch them while talking and making points. Simple as that.
