Depends on how good you are.

If you're a beginner and still figuring things out then 10-15 sets for daygame and about 30-40 sets for night game. The daygame numbers include warm up sets, the night game numbers include warm up and social proof building sets which should make up the bulk of the sets you approach. I mean you'd probably go insane if you had full blown conversations with 20+ groups, not to mention you'd probably have to go home at 7am in the morning if you did that. Haha

If you're intermediate around 3-5 daygame sets is fine. Night game, probably around 3 "working sets" assuming you already have your own social proof because you go to the club with a bunch of hot girls. If not, still build social proof by approaching a bunch of people and having nice interactions that last around 30 seconds or less. If you consider yourself an intermediate though, you should be able to consistently bring at least 5 hot girls with you to the club.

If you're advanced then approach only when the opportunity presents itself as you go through your daily life. Whether you approach or not shouldn't be a big deal at this point since you should have a social circle that has you meeting new hot girls all the time via introductions.

It's up to you, I don't advocate mass approaching. If I'm a little nervous then I know I should be taking action. I might say to myself "avoid nothing" for that day. Them the next day only initiate with women I'd actually like to meet
