In this situation you should probably say something cocky then move on. If she's truly interested you can always re-engage her. Your responses you brought up work. You could get faux-angry, go "Then stop looking at me, you're such a creep!" and get up and leave. Or go "I like a challenge!" and smile. Other responses I can think of off the top of my head are like "Oh, I don't think he minds sharing!" (jokingly) or just a genuine "wow, what a lucky guy, to have a beautiful lady like you" (probably a good generic response). Give her the impression that you aren't trying to break her up like a needy creeper, but that if she's willing, so are you.

My two cents. There's a few different "I'm seeing someone", tho.

She is seeing someone and the relationship is crumbling, she's looking for the straw to break the camel's back or revenge.
She is seeing someone and she's not going to cheat on him.
She is not attracted to you and she's saying that upfront to get rid of you.

1&3 are typically agree and amplify 2 is social proof "Well then you can help me get laid. What do you think of that girl over there?"
