It sounds like she's at least lightly flirting with you but you're failing her shit tests pretty badly.

If you take a lot of your responses and turn them into statements where you're assuming attraction, you're going to sound a lot less like you're seeking her validation.

This is a decent misinterpretation but it works better but lands even better as a statement. Instead you could say something like "I didn't know you found me that handsome" with a smirk.

She's shit testing you because your response was needy. Something like "that's what your eyes were saying" or "I have even nicer hair than him" where you continue the bit is better. Asking a girl what she thinks of you is one of the neediest things you can do.

Her telling you when she has time off is a massive green light.

Bringing up the idea that she will miss you is good but you're doing it in a needy way. "Try not to miss me too much" is much better.

I think there's a decent chance she'll agree to go out with you but you need to be way less needy when you're flirting with her. Look up how to pass/deal with shit tests. Flirt with her again, and suggest that you guys do something together Wednesday.

I am presuming you are having these conversations at work? In person?

Ask her to grab lunch off-campus from where you work. Eliminate the awkward work talk from the equation. And then ask her out. No hiding. Just say you want to take her out on a date.

Either she says yes or she says no (or she says maybe which is the same thing).

She could easily be uncomfortable not with you but with the work environment.

TL;DR don't overthink it just ask her out

I would suggest not to be so pushy to make the girl reveal her feelings or commit to you. It feels needy and a bit cheesy too. You can keep the mystery in the air, and instead just conduct playful interactions, trigger emotions and create opportunities where you can get more personal and direct, outside of work atmosphere. Next time if you feel girl may like you and you vibe with each other very well, ask her casually and naturally to spend some time together on some pleasurable and interesting activities.
