My advice is to only use texting for logistics, or else you'll get way too needy and attached to the girl. obviously don't be autistic about it, if the girl texts you a question or sends you something first then respond obviously.
Just give it a week or so. If she still says she's unavailable/not interested after the second invite, then text her something along the lines of "Alright, let me know when you'll be available to hangout. If you're not interested that's cool too". The second sentence is a signal to her showing that you're OK with her rejecting you if she wants to. She'll either say something like "Sorry, just been super busy with school. How about we hangout next week?" or she'll say something like "Yeah I have a boyfriend/not interested/whatever".

I agree with that. X mas break is coming up, plus I’ll be leaving here in a month or so, So I’d rather try to re-initiate sooner rather than later.

I don't like the "texting is for logistics" answer. If you meet a girl in a bar, the next day she's going to be in a completely different mindset than when you got her number. So, you can't just jump in and act like you're resuming the conversation. You need to build back to that in most cases (unless you both invested a lot in the initial interaction). Connect with her emotionally.
Advanced dudes can build attraction through text. Master pimps can attract and build comfort and basically skip ahead in dates - all through text ;)
It's a fun skill to work on from the cubicle.
