Well first of all, if this is happening to you enough for you to need an "exit strategy" you are probably doing it wrong. When you tease somebody you have to know where the line is, and make it clear it's a joke, and don't go near anywhere sensitive.

Sometimes, however, a girl will shit test you by pretending to be offended. If a girl says she's offended, I will just say "hey I was just trying to be funny, I'm sorry" and if she continues to be offended, I just walk away. I show her that we're not going to make the entire night her being mad at me.

I guess it depends on how far you went, but if its a minor offence I always ask her why she's so sensitive about it (in a curious way, not being a dickhead) and then maybe relate back to a similar experience of mine.

Apart from doing it wrong, you may just be meeting really insecure girls. Some cool girls with high self esteem will just roll their eyes and say whatever, while other girls will simply act destroyed by the slightest tease. Red flag if a girl takes every tease as a personal insult.
