Most important - there is no perfect time, less than perfect times ARE the perfect time. Warm her up a tiny bit, let her feel it then ask it like you own it.

I have low self confidence and self-esteem, but I have a feeling she was interested as well, unfortunately because of my aforementioned defaults, I couldn't try to seriously initiate something.
You should work on that, it will otherwise break your neck in every interaction with a girl.
After a couple weeks working I noticed her and thought that if I was to try something it would be with her, she works in another part of the store, and we sometime meet at the cardboard recycling dump, or in the elevator to our stock. (I'm on the 3rd and she's on the 2nd floor).
Oh that's dangerous territory. It sounds like you are steering into oneitis.
I gained confidence when a couple times she would come get me at the the third floor from the second before going down the the first (we have see-through floors).
By confidence you mean that you are confident she likes you? or was it more the confidence that you are attractive? Both are not really optimal, but the second one is even worse, since you never should get your self worth, or confidence from external factors like other people.
meaning she intentionally went out of her way to have a chat, or so I hope. (nobody ever does this 'elevator pick-up ride' at the store). She would also joke when we rolled nearby in the store.
That sounds like this could be something, but you should not put your hopes too high, otherwise you will get crushed by it.
My first steps toward my goal was to try to get as many elevator ride together as possible, so that we could chat a bit (barely 20-30 sec).So when I knew she was below on the 2nd floor, I would take longer or less time than usual to load up my transpal than usual so that when I saw/heard her rolling toward the elevator, I would go there first and pick her up on my way down. It worked quite well and after 7-8 rides it's not an awkward "hi" or anything, we're talking and joking about stuff etc.
Don't get me wrong here, but this is a behavior that will not do you good. You basically put all your hopes into one person, and we all know what happens when this person is not interested the way we want it to. Also what you did shows neediness, which is another problem, since it could show in your interactions with her, which could turn her off and land you in the "LJBF" land. At least it might slip out when you talk to her, and in most cases this will be perceived as creepy.
I also lost confidence a few times since she does chat and casually laugh with a lot of other employees, and one in particular has his break at the same time with her and sometimes climbs up the the 2nd floor and have a chat with her there jut before the end of shift.
Oh buddy... I see your heart being broken soon...
To me it seems like he's trying hard but she not interested (or so I hope). But it goes to show that she might just be talking to everyone, and/or that she's not interested in more than chatting. I also think that the longer I take to make a move, the more she will find the situation boring and lose interest (again, if she ever has some).
The thing here is, you are already getting jealous at the guys she talks to, you probably feel like this is your only chance to find a girl, and if you fail, it will be the end of the world. This is fatal for you, and i am sure it is not how reality works for you, you have many many opportunities and there are many girls out there.
I said to myself many times to ask her what she was doing on [enter day here] and/or if she would like to go grab coffee in town, but each time I would not get as many elevator rides as I wanted to (we kinda need to be alone in the stock for this as I don't want people to hear, and also to have at least met once or two before as asking her out at 5:30am in a dark industrial elevator would be weird) But yeah, tomorrow I've decided that I would ask her out at any occasion, because it's been 2 and a half week of half-assed efforts and a mini roller coaster of emotions. Time to find out what's going to happen. Please give me thoughts on this!

Ok, let's cut to the chase: You already told us you are unconfident, which is you main problem and will be the deciding factor how well you will do with any girl. What you described is somewhat creepy, that you go out of your way to meet her for a minute etc. Do yourself a favor and don't do things like that in the future, it radiates insecurity, neediness and like i said it's widely considered creepy. By the way, i used to do the same when i was younger, and it never went well for me.
So, my first advice to you is to go out more, approach more women, fight the anxiety, learn that you are a valuable man, that you don't need external validation to know how awesome you are, and that you are attractive as long as you feel it.
My second advice is, to not get your hopes too high, since the chance she rejects you is not too small, and if it happens, make clear for yourself that it's not the end of the world, she is just on of so many attractive girls out there, and you have your pick.
Lastly my third advice is: Become more unimpressed, more leading, less anxious, so you don't have to fabricate excuses to meet a girl in an elevator to talk to her, instead you go to her, tell her you like what you see and would like to get to know her. No one will care if you do, and the ones that might look and talk about it, are mostly people who feel remote shame because they don't have the balls to do this themselves, so you should just don't give a fuck. All in all, you should relax, just treat her like you would treat your friends, and wipe the fears of rejection, the shame (what if people see me doing this) or whatever, off the screen. You are a man, and you have nothing to be afraid of. She is a girl and girls like men, and vice versa. There is nothing wrong with it, and you should always have this mindset on.
That being said, good luck and go get her.

I made my move today and it was very far from textbook, it was at the end of shift in the elevator (duh) and I just asked her what she was doing on the week end, she said she would probably go out, I asked if she wanted to go to town and she shrugged 'no, not really'.
Hey, things sometimes go this way, don't mind it.
I'm pretty sure even though I did not asked her out per say, she got the message and tried to defuse the situation so that it wouldn't be awkward.
You have to look into this from a different perspective: you are working "together", at least in the same company, and this is where i personally draw the line, it's simply not worth the hassle when something goes wrong, and from a female perspective its even worse, since they feel more conscious about what others think and if things go awkward or in worst case the guy doesn´t take it the right way, sure it looks like she rejected your offer, but this doesn't have to mean anything.
So i guess the best is just to carry on as usual.
Yes, absolutely. You did nothing wrong, you were polite, not pushing so you have nothing to be ashamed of. You should act that way, and take care that you don't let this nervousness shine through.
I'm hoping she did not really got it and only got it afterwards, but that's wishful thinking.
You know what? It doesn't matter. You had balls! You went out of your comfort zone, and this is in itself something to be proud of. Of course she knows what you were planning, and again, it was the point of asking her. From experience i can tell you, she will not make it into a big deal if you aren't. Treat her the same way you did before, practice a little more dominant and confident attitude on her and see how her behavior will change.
as you said, plenty of others girls and my judgment about her being slightly interested were most likely unfounded.
I would not see it this way, always assume attraction. In your case it could be that your offer was simply not what she was looking for, or she was in bad mood, maybe her hamster died of cold or whatever, you can't know. The point is that you have to try to know, and learn from your mistakes. There is always another chance, and you can try again with her in the future, more decisive, more clearly in your intent, maybe she will reciprocate it better the more dominant you become.
Your comments are on point, I don't think it came out as creepy since it was just a few times waiting 1 or 2 mins more organizing cardboard box in the stock, but an omniscient observer would definitely see it that way.
I was just pointing out how this might come out, i wasn't there, but like i said, when i was in my early 20's i behaved exactly like that, and guess what: no girl wanted me.
Even if my try was very poor and the result unexciting, I'm glad I did it, otherwise I would have been mad at myself to not have tried it, and I can also focus more on my job now.
Absolutley! That's all that matters, it gives you experience and opportunity to learn from your mistakes.
Yeah I meant confident she liked me at least a tiny bit to enjoy chatting with me every now and then, I agree this is probably insignificant to romantic interest. Again, thanks for your advices, I think a lot about how to fight insecurities but it helps when thoughts and comments comes from somewhere else than yourself. I'll do my best, cheers!

The best way to fight it is to face it. You get more and more numb to the feeling with more exposure. The pace you go at is your choice, but it is inevitable to go out of your comfortzone to see that most of your insecurities are only in your mind.
Anyways, be proud of yourself, you made progress, now keep the progresses coming and in no time you will laugh about your old self.

Sorry it didn't work out. Next time stay away from that "Want to go to town" generic stuff. You really didn't ask her out did you? Be specific, have a date in mind and ask for that.
