Don't shit where you eat applies to every type of job. Business is business. Keep it professional, for all you know you are just another source of validation for her to suck dry and any formal attempt to game her will be met with hostility. Before you know it she's told a few friends she occasionally grabs lunch with who are involved with your boss and you're labelled the office creep who the can't wait to kick out the door.
Just go to work, get as much experience as you can, network, learn. Don't burn bridges and keep your nose clean in the corporate world. She may well be very interested and desperate for a shag but the risk does not equal the reward.

I work with some pretty professional folks, women don't want to be known as the office slut so often they really wanna keep it quiet. It can work, it happens all the time in fact. Your mileage may vary, I would make 1000% sure she is into you, or just wait until the job is over.
