That's not much info but I'll try to help.
It seems as if you don't make the right impression since day 2 doesn't happen. Girls might tend to give you a(ny) number to get rid off you but I can't tell. Make plans right away and wrap the deal before getting the number. The convo should be like this (as soon as she's comfortable with you):
You: "Let's grab a "beverage" at "day" at "time" at "location"!" Assume attraction and say it like you've known her for years, make it definite, don't ask but "dictate".
She: "Cool, I'm in." / "No, "some kind of excuse"." / Definite no / "I'm not sure if I'm free"
Case 1: Exchange numbers just in case something interferes your plans
Case 2: Probably a shit test, be witty.
Example: Sry, I already have a bf. Answer:"He doesn't have to come if he doesn't want to."
Case 3: Go to the next girl Case 4: Try to initiate an instant date and grab a coffee with her. (That's actually something you should always try to do unless you or she don't/doesn't have the time)

Also avoid text game, because the more you text to her the less you have to talk about at a real date. Texting is just for appointments and nothing else. It also shows a certain kind of occupation (a.k.a. you're doing something out of your life), abundance and independence.

Another tip: Anime Eyes. As soon as you see her eyes widen pull her into the next bar, restaurant, whatever and get to know her better. And don't forget to kino!

So I started to cold approach and it's actually pretty easy to talk to girls. I also usually get a number out of it. But I can't get to day 2.

This is a problem with your conversation/attentive skills and possibly with the opener. Also, make sure you're doing a Number Exchange, not just getting their number.

So any advice on what to do to get there? I tried making plans with them at the approach, but not very often.

Making plans with them at the approach is rushing it and failing to pay attention to them before bluntly steamrollering them. You don't get to a Day 2 by rushing or mechanically following a formula without regard to the other person's feedback

Just talk to them.

Walk up to them,
Talk to them,
But most importantly, LISTEN to them after you've said something. Every time you've said something, you should then be listening to what they say with every fiber of your being. (As in, you should not be thinking about what you're going to say next. You should be taking in everything they say.)
After they finish talking, then you think about what they have said and come up with a reply that references what they JUST said and bonus points for digging deeper into what they just said.

Also I think my text game plain out sucks...

Text game is not a thing to worry about, per se.

Text them something ASAP after separating from them, to the effect of, "It was nice/great/awesome meeting you.... [insert reference to the conversation if possible].
Follow up later to ask them to hang out with you. Don't try to become pen pals.

Honestly, I never thought getting numbers meant anything. I'm not a "player" by any means, and I'm probably of average attractiveness. But I can probably get a number exchange within 5–10 minutes of talking to a new girl. Sometimes we hang out, sometimes we don't (I'm not looking to hook up, just making new friends). I think everyone is making a huge deal about getting a number when really, a girl just wants to know your not a creep before she gives it out.

Let the number closes give you a little confidence to reinforce the idea that you can be successful. Learning the hard way is the best way in this game I feel.
