the easiest weeknight meal is boxed mac and cheese with basically any protein you have on hand and whatever vegetable you wanna use up. pork, chicken, beef, most types of fish, crustaceans and crab/lobster welcome. any vegetable kale, asparagus, Brussels sprouts, green beans, broccoli, corn, carrots, celery, bok choy even. peppers mushrooms onions leeks et cetera. you can turn it into a disgusting looking slop factory and it will always hit no matter what.

i also love vegetables. you can get a decent amount of fiber with a sheetpan meal by just including skin on potatoes, carrots, Brussels sprouts, or broccoli. get some cheap cuts of chicken like drumsticks or thighs. douse all the veggies and chicken with a good amount of olive oil + herbs. finish with a squeeze of lemon. tastes super Mediterranean yk. excellent

sometimes i just sit around thinking about how much i love beans. also legumes in general. i am fairly health conscious with what i cook most of the time. but there's nothing like adding beans to soups and stews. fiber, protein, healthy fats existing in one perfectly calibrated dish. white chicken chili, regular chili, sausage and bean stew, these are the three dishes i put into my calorie tracker app and i am always impressed by the near perfect balance of macros.
