To state the obvious:

It is not that you intimidate men. It's that you aren't attractive to men.

They are not saying your height and background intimidate them. They're saying your height and background do not interest them. They're saying "not interested" and you're reading that as "intimidated". No. That's not it.

Men are not scared of you. It's that men don't want to deal with you because you're not worth the time or trouble.

You're 5'10", a military vet, a former cop. You're not feminine. You need to accentuate your femininity. You're going to have to do and be lots of girly things.

I will bet that you don't know how to dress for your height and body habitus. You look and act like a man. You don't have a feminine hairstyle or appearance. So you'll have to work on that.

"Not interested" does not mean "afraid" or "intimidated".

It's not so much that men are intimidated, it's that there isn't much of a market to date a 47 year old. The only reasonable guys I know that would be interested would be guys in their late 50s early 60s who sees a 47 year old as "young"

I have yet to meet a female cop (and I know a number of them of different ages from different cities) that didn't have serious psychological issues.

Cops have to deal with a lot of shit, which they inevitably bring home with them.

That alone would be a red flag to a lot of men, even if she was young and hot.
