How do you know if you're falling for the girl and not your image of her?

Only time can tell. You must be persistent in finding out all the facets of another person - after you have seen them in different circumstances, see her challenged in ways, see her excel - only then can you consider the idea that you might know who she is. You're definitely falling for an image right now. It's fun and all, thinking someone is hot shit, but getting too deep is a recipe for disappointment. Be reasonable!

Calibrate your image by comparing it to a new dataset: hang out with her more. As you learn more about who she is, your image of her will get more accurate. That said, I think dwelling inwardly on your image of someone might be the wrong way to spend your time. She actually exists in the real world. Go hang out!

Stop wondering, stop dwelling, and quit worrying: you're not falling in love. You don't know who she is yet, and you're not sure if you're interested. But it seems you might be, and she might be, too. Go ahead and see if she'd like to go on a date.

If she's not interested: well, that solves all of your questions, doesn't it? If she is, then you can begin to explore one another in an arbitrarily-romantic context. Nothing will answer for you whether or not you like her and whether or not your image of her is correct better than learning more.

God. I'm extremely experienced and I'm still shitty with this. Mostly I try to give the relationship 6 months before I make any kind of conclusions of how important a girl really should be to me.. Then I shit test my girls a little to see just how much they are in the relationship/if what they have said is true.

The real problem is less fooling yourself and more that they have a great facade on. Most people crack at about the 6 month mark or sooner. One time this person I saw showed her ass literally on our six month anniversary date. I tried to make it fit for two months but ultimately realized I had it better elsewhere and blew the whole thing up spectacularly.
