Sounds like what you're dealing with is jealousy. You're focusing on some other chick where the hot one is used to being hit on almost constantly. By not focusing on her you're forcing her to qualify herself, and so she does... and does... and does... either you can be playful with her and dhv to the one you want, or take advantage of this girl and escalate with her after a bit and probably get a close... even if it isn't the girl you were initially after. Personally I'd stick to the girls who are attractive to you and watch the "hot" one suffer.

That's interesting, I've never seen this because I always focus on the hotter one. I would try isolating your girl when this happens.

This is standard set dynamics. The prettiest one is used to getting all the attention. So you deliberately pay attention to everyone but her. She will try to get your attention. Then treat her like a brat who is interrupting your conversations with the other girls. Eventually, you let her earn your attention.
