I work with this guy who is literally the biggest douche I've ever met.

God, so much to unpack here in this one scenario. Let's dive in, shall we?

He's so weak in the mind that he is always seeking approval of others through his bragging. Pro-Tip: A guy with a strong mindset wouldn't feel the need to brag, no matter what he has going on.
A smart lad would know that he's shooting himself in the foot by talking this much about his activity. It's a small world and you never know when a good relationship you have now, will pay off in the future as a referral with some girl you're interested in. And the opposite is true as well: you never know when someone you're interacting with now, could end up being someone who could monkey-wrench you with some girl later.
"Telling everyone" about a threesome, is not having a threesome. Often, guys who talk the most shit, don't get much action in the real world. And to be honest, the whole mindset that leads to this behavior of constantly needing approval through bragging, is unlikely to be able to pull off most of the things he's bragging about.
Speaking of shooting himself in the foot, this guy is probably not going to have a GF very long if he goes on the way he is. Six degrees of Kevin Bacon, man. Everyone is connected. He blabs like this and then expects others to keep their mouths shut. Only they're not going to. Sooner or later, he won't have control over the information and it will come out.
His girlfriend is probably aware on some level that he cheats. And to be honest, guys like this co-worker of yours, are almost doing you a favor by taking girls like this out of the pool. You don't want the kind of drama in your life that a girl like this wants.
Key phrase: girls like this. No, not every girl wants this kind of drama, and trust me, a guy like that puts off a scent that any girl with her head on straight, can smell a mile away. His weak mind, lack of honesty, etc., that will all come out in his body language and word choice in a million ways.

Go into a local club....

Guy sees a girl who is obviously a regular and it is apparent that said girl has fucked nearly every dude in the club....most guys recoil and want nothing to do with the bar skank.

Girl walks into a bar, see dude who is regular and obviously had been balls deep with 98 of the 100 girls in the club, some of whom now hate his freaking guts because he has used them as cum dumpsters...girl gets the ultimate tingles and wants to that GUY more than any other dude in the place.

This is such an overdone topic but here goes.

The summation is, "douches" generally have overlapping personality traits with other successful types. Self confidence and low neediness being one of them.

Woman are people.. Like anybody. We're all attracted to people that appear genuinely comfortable with themselves and not needing validation from others.

To your example: this guy bullshits and has a loud mouth about things. He also likely doesn't have any investment in what most people think but knows how to have a good time and focus attention on a woman with seemingly genuine neutrality, just treating them like people and happy to be around you or to leave you alone without some alterior motive.

That behavior overlaps with a genuine wholesome person that is attractive, the difference is it's still the superficial. You find out soon enough etc.

That's it. He bags them left and right, this speaks nothing to commitment or long term stability, happiness...

Women like confident men who lead and are clear in their intent...and douches are generally those things plus persistent. :) So, you can lead and be confident and clear in your intent, and do well with women without being a douche.

People think the world should work a certain way but in reality nothing is certain. You are actually missing a lot. This guy probably has a skill that most guys don't. That or he tries a lot more than the average guy. Getting with women can sometime be described as a skill. The more you practice, the better you get.

He's always taking about some girl and how he banged her, or showing nudes left and right. Just today he was telling everyone about a threesome he's going to have, then he follows up with, "I can't this weekend though, I gotta see my girlfriend."

Some people say it is pointless to have a million dollars and not spend it. I would assume the same applies to guys who are accomplished with women. Whats the point of sleeping with a lot of girls and telling no one? Also, who doesn't have a bucket list for what they would like to do with a woman?

In short, it isn't about being a douch, it is about being different, trying and having a skill.
