The advice elsewhere in the thread about not fucking up your grade is sound. What you need is an idea that she cannot deny support to but if implemented would be a Pyrrhic victory.

I humbly submit that you should demand for the expansion of women's studies to not just be a course, but an overt component of as many courses as possible. Female specific issues should be given priority across courses as "the very foundation of higher education rests upon the oppression of women." Advocate a total overhaul of all non-STEM subjects (not because it wouldn't be funny, but that it's too difficult to justify) to certify that they don't harbor the vestiges of patriarchal thinking.

Take care to run it to the edge of absurdity without overdoing it. You'll know you got it right when she loves it and everyone it would affect wants you expelled. Be subtle, and be sure to let her review your rough drafts.

Whatever you do, don't confront her. She'll take revenge if she catches a whiff of resistance.

you can always frame a womens issue as a mans issue. The "Patriarchy" makes women out to be weaker so they are not tried as seriously for domestic crimes; therefore you can argue for stricter sentences against women.

You can frame the stupid final project any way that makes you want to actually write the letter.

Consider having a word with the higher ups and let it be anonymously. You can't have this teacher knowing the complaint came from you. I've had feminist teachers before and gone through bullshit for opposing them. Women typically have no grasping of the concept of honor, so most will feel like it's totally justified to give you a lesser grade because "you're the bad guy".

Write the letter, get the grade. Document every instance of political indoctrination. Go to ombudsman, dean, school president, student press. Never, ever mention your belief system (they will use it against you). Just say you dissent from hers.

If this is a public university what she is doing may be a crime. At the least it is a 1st Amendment violation.

Also, go to FIRE, an academic freedom organization.

Don't confront her until AFTER you have your grade in writing. Then tell her exactly what you think.

Talk about obesity for both women and men. And how everyone should have gyms subsidized to reduce obesity, diabetes etc. Start out with increasing obesity rates in WOMENZ over time, the resultant side effects both physically and economically, then expand to "it affects men as well...etc".

Write the letter for the grade, but don't send it. I know a lot of people here want you to act out their revenge fantasy of reporting the professor and getting her fired, but let's face it, it is not happening. Even if it does, you don't get anything out of it, and you will be known as a snitch and as an anti-feminist. You ever touch the line and you are done (i.e. a girl accuses you of sexual assault), as they will be looking to get rid of you.

Sometimes, you have to go full sociopath and do what is best for yourself, which is getting the A and moving on. When you get into the real world, you will deal with this type of bullshit all the time, and if you want to move up the ladder, you will have to know how to deal with it. For example, when you start working, you may have to pay corporate lip service to a lot of things for legal liability reasons. Everybody on the top level knows it and they play their role and get their big paychecks. If you think you point it out and call bullshit, thinking you are smarter than management, then you actually reveal that you don't "get it" and you'll never be allowed to move up (for very good reason).

Life is full of these shit-tests and they are not necessarily going to come from women. This is probably just one of the first big ones you've had to deal with, but when you are an adult you will have to deal with it all the time. Social Justice Warrior spend an exceedingly large amount of time and efforts fighting their perceived injustices (and there might actually be some real injustices), but they end up being low functioning members of society who are not very significant and do not accomplish anything in life. Don't be like that.

Wait til final grades are in and she can't change them. Don't under estimate what crazy people are capable of. Write it in her professor review or something. Or file a complaint with the school after the semester is over.

my body my choice: legalize marijuana. women can extract alimony and child support from male employees of dispensaries rather than unable to collect black market under the table cash income. I was actually a women's studies minor. Easiest goddamn minor of all time. A lot of it was women angrily accusing me of hilarious things.

Example:

Student: "You don't know what it's like to be expected to cook your father breakfast every Saturday!"

me: "You're right. My dad woke my ass up at 6AM to mow the lawn. Can we switch?"

Example:

Professor made us read some article entitled "the 20 powers of men" or something like that. We then had to write a reaction paper. Mine was entitled, "Now that I know my penis is a magical wand, I have plans for the weekend!"

Any time a feminist brings this type of shit up, the primary argument should first be a definition of what feminism is. Most of the standard definitions include something like that it is an ideology of equality. Once you can get them to agree to these standard definitions, then any argument you make for equality is, by definition, a feminist argument.

As someone who writes these assignments (for totally different subjects), (and is admittedly dealing with students who keep trying to "buck" the assignment) - do the assignment. She is unlikely to submit your writeup to anyone. She wants to see if you can write well. This isnt you submitting to a "female overlord". This is you finishing an assignment! (Time to downvote me to hell)
