I have three rules, don’t date architects, don’t date customers and don’t date co-workers. Be careful, imagine if you did start going out with her, things get hot and heavy, 6 months later you guys split. Think of the work dynamics at this point. To me, it’s not worth it.

It’s not that interesting really. I am an architect, most of my good friends are architects, I work with architects, I just need some flavor in my life.

I don't have real problems with that, but I used to. I respect your opinion but there are alot of successful cases of relationships at my work. There are also some that didn't work, but as long as I can put up with it, don't think that would be an issue.

You're gonna fuck this up if you haven't already so listen closely.
Don't fucking ask her out for coffee. Friends do coffee. Friends do movies.
Also, if you are texting and noticing she is "taking too long" to reply, you are texting too fast and too much. Stop being a needy chode. It will push her away. She is probably initiating stuff because she is interested in you but if you reply with a wall of text, or faster than she replies, or with questions instead of funny remaks that rarely NEED a response, you are killing attraction. Make her wait.
In person, ask her when she is free to grab a DRINK next week. Don't ask if she wants to. Ask WHEN SHE IS FREE (then set a specific time and place to meet). And DO NOT CALL IT A DATE. She'll know the implications of this are romantic without you needing to call it a date etc. If she tries to do a coffee or movie, stand firm and push back.
I totally disagree about not fucking coworkers. Unless you are immature children, it doesn't matter if you go on one date or date of 3 years then split. Shouldn't be a professional issue.

IMO, no. Better be direct so your intentions are CLEAR. If she's not ready, you will find out.
If you give her mixed signals, be a nice guy etc she'll either think you are a pussy, feel rejected and wonder what's wrong with her because you didn't escalate (then lose interest), put you in friend zone because you do friend things etc.
I have learned these lessons the hard way.
