I secured a date over text, the problem is it's 2 weeks away, should I still text the girl in the meantime?

My man, if you feel like texting and having a good convo then do text. But while texting dont show that you are excited about the date and stuff. That would lower your social value. Instead 2 days before the date you could hit her up to confirm whether the plan was still on or not. You could ask her how her day was but small chit chats would be better imo rather than long passionate conversation. Keep the long passionate convos up to you when the two of you meet. The problem with most of the guys is that they tend to overdo stuffs while texting and have nothing to discuss while in person. Dont do that error. Cheers. Hope everything goes well

Texting is for logistics. Confirm plans the day before and go out and meet more girls. You might meet someone amazing or it might just be practice, but it's always better than nagging this girl with texts.

You can respond to her of course, just don't drag her into a full-on conversation about your relationship with your mother.
