Stop texting, call. Offer her a choice of two dates. If she can't make either ask her to suggest a time. If she doesn't then politely disengage. If she flakes, next her without further contact.

I'd stop texting her altogether. Let it sit for up to two weeks (unless she initiates some kind of random convo, in that case you jump on it and arrange date), then try one more time. You can use this approach:

"When are you free in the next few days in the evening?"

That beats other ways of asking, since now she has to tell you the options, you pick what works for you. And if she doesn't (has some BS-sounding excuse for you), then you can be pretty sure she doesn't wanna go anyways, so that'd be a boring as fuck date - and instantly next her. "oh okay, well if you change your mind, let me know we could plan something then. Have a good one."

She's interested, just terrible at logistics (AWALT).

Don't be pushy, just keep trying. You'll get there in a week or a month. If she keeps saying no, without trying to reschedule, THEN you next her.
