In my past "less educated" states I spent a good $350 on a coach purse, $400 on a watch and other jewelry when you are done with the bitch you will hate the purchases, and she will not give a flying fuck about them.

She will probably sell the jewelry for a 10th of value or just give it away. Again do shit that you can both enjoy and is not tangibly expensive.

In all of my experience, the biggest thing you can ever give a woman is your time.

This presumes of course that you've covered your shit and time is already the most scarce thing you can offer her.

Whatever you do, do it together, and actually be present the whole time. Actually focus on being there in the moment. You don't need to focus on her, just being there is plenty.

Source: I pretty much never buy gifts for girls, me being around for a whole afternoon is enough of a prize to make them go crazy. Fuck, I live live with my current ltr and any day I choose to actually focus on her she goes wild because the attention getting is good.

On birthdays and our anniversary, she may get as much as a whole afternoon to herself, with me. She loves it more than anything, keeps snapshots and mementos of whatever we do that day.

Tl/DR if you've kept your time valuable, give her time, the activity spent on it can be about you, the shared/sacrificed time is what's relevant.

Breakfast in bed. Pancakes, waffles, strawberries, champagne... Give her a book with photo collage of pics of the two of you as a couple, accompanied by cocky-funny comments. Last page should contain a frame with a question mark, accompanied by hints concerning activities planned that day.

Plan an experience she'll enjoy. Provide a picnic for afterwards, get a bottle of bubbles or vino, drive up to the sea or wander into the wild. Eat, drink, fool around, cuddle, ...

Go back for suprise party/dinner/bbq in the evening with the people she loves most.

Finally, let her choose a pic of that day and put it in the book.

I find experiences for the both of you are best. I've gone down the road of buying material gifts, sometimes even expensive back in the day. Either they like them, or they don't - they also cost a lot.

Example: Almost bought a girl one of those KitchenAid mixers... $300 or something. Fuck that.

I'd suggest now, even a day out horseback riding for the both of you. This builds your life experience as well as hers. I'd suggest again small idiotic gifts such as flowers, cards, etc...
