Everything a woman says or does that gives you options to react in one way or another is more or less a shit test. At least it's safer to see it that way.

Basically it's a challenge to your manhood. You fail it by acting according to her or society's implied expectations and pass it by acting like an assertive, self-assured and self-reliant man confident in your value.

Example: "Will you treat me like a princess?"
"I sure will": FAIL
"I'll treat you like my little slut": PASS

it depends on how cynical you want to get.

pretty much anything that comes out of a woman's mouth is a shit test, because they can emotionally edit their meaning AFTER THE FACT. we're talking about WOMEN, not MEN.

but specifically, anything said to:

get an emotional reaction from you
get you to do something for her
provoke you into sharing an opinion
criticize you

this one is interesting, it occured to me two times with two different girls, who were obviously interested in me. '' are you gay? i thought you were gay!'' Example of shit test that I won:

While dancing with a chick on a dance course (bachata) , I half turned her so that her ass was against my groin and I put my hand on her belly. I accidentally touched her boobs when placing my hand on her belly.
