I find this a little refreshing to see that some men experience this issue as well.... read this post and I would like to hear your thoughts?

How much is it my responsibility to handle someone else's feelings? How do I stop texting with someone?
I (33M) met someone at a bar this weekend. She wanted to get another drink, but I had to leave early because of a commitment so I got her number. She was hitting on me hard, was interesting, attractive, intuitive, but with an edge of insecurity that you can feel in everything she said. I was into it, but could tell both from the conversation and from looking her up on social media later that we have very different lifestyles and backgrounds. She's an artistic type with a macabre aesthetic and she had a fade and lots of tats. She mentioned hooking up with guys and lived with an ex-bf.
Background: I'm fairly conservative morally and aesthetically (not politically) - a "nice guy," boring but successful career, etc. I'm a little artistic and I enjoy different kinds of people, including some dark stuff, but my tastes generally tend to be very vanilla. My style is conventional preppy/hipster. I grew up in a traditional family and I want basically that same life but with a little more creativity and open-mindedness. I've hooked up a few times, but most of them ended terribly (usually the girl catching feelings and being angry at me for not wanting things to continue), and I just don't feel good about it anymore. I'm trying to be open-minded about meeting women - everybody tells me I "just need to go for it" in every situation - but honestly it's hard to find someone I feel understood by. And it feels like everyone that I get involved with is really hurt when I'm not interested - especially if they're over 30. I'm pretty agreeable so I get along with everyone... so every woman tells me she feels like we have "chemistry" even though half the time I'm thinking "WTF? I've just been listening to you and nodding because this is so out of my frame of reference." I'm also a strong empath and vulnerable to women manipulating me by being hurt - though I've worked on that and gone to therapy since my last relationship.
Anyway, I got her number intending to ask her to hang out again, but decided against it after looking her up. Then she started texting me, so I was friendly and we talked a bit. She said she doesn't know many people in town - I have a thick network of friends and things I'm involved in. I said maybe I could invite her to a party some time so she could meet people - figured that was kind of a friend-zoning plus I really do love to do that for people who are looking for friends. Then she kept texting me. Every time I do the 2-3 hour delay on replying and start winding the conversation down, she asks more questions - what am I doing now, how is work, how was my hangout with friends, etc. She always responds immediately and tries to keep the convo going. I'm pretty busy, as mentioned above, and it's annoying to text all the time. My replies have gotten more and more delayed, but it doesn't seem to faze her.
I'm not sure what to do now. I was tempted to find a time to just ask her to get another drink and let this thing play out. I'm assuming things about her based on a lot of incomplete information - maybe the solution is to get to know her more. I really do find her interesting and wouldn't mind hanging out at all. But I also find her attractive and would be tempted to hook up with her if she continued flirting like she did at the bar. And the whole situation - with her not having many friends - just feels like this is a bad idea and is going to end in me hurting someone again. But I don't want to just ghost her. And I don't want to say "hey I don't like talking to you." I really wouldn't mind being friends with her and introducing her to people.
I guess I need advice both on this situation and my whole personality ha.
