Or, you dont need to bake white bread. Norwegians eat like six slices each day (two for breakfast, two for lunch and two for supper), but it is whole grain or at the very least whole wheat. White bread is reserved for nice evening dinners such as sides for lasagna.

Alas, I'm in the same boat. I really enjoyed baking and of course eating bread. However, I've been slowly shedding weight and I'm sure my heart and my lifestyle 20 years from now will greatly appreciate it.
I'll have some rolls at the odd dinner out with family once a week and enjoy them, but I just can't go baking half a pound or more of bread for myself...

Eliminate bread now while you're young. Fuck all I eat is meat and veggies and the pounds ever-so-slowly come off. When I was in my 20s I ate a large fucking pizza every night and I never gained....now I eat a slice and I gain a pound....fuck me.

Yup. I'm not super-strict but I try to stick with low-carb on most days. When I'm eating out with family then I'll just enjoy myself and eat whatever I want including desert. Usually it doesn't set me back much. If I go a bit heavy on it (holidays/etc) I'll gain a few pounds, but they come off just as quickly (mostly water going on/off low-carb). I'm losing a pound or two per week steadily and that is my goal. Should be very good for me.
I've tried doing balanced diets and I find it impossible to control myself. I just can't beat the urges to do dessert/etc. When I've been doing low carb for a day or two I really don't get the urge for sugary stuff and that makes a huge difference.

I baked my own bread when I worked 55 hours a week. It's 5 minutes of work, and tastes better. I didn't need to do it because of the much lower cost. Single mothers say they buy convenience foods because they don't have time. If they did this they would have more money.

For the price of 3-4 loaves of bread, you can buy a bag of flour and yeast to make 2-3 times as much bread. Freeze leftover (not fridge) to keep the flavor. Also, do as they used to do and toast older bread. The main purpose of toasting bread in the past was to make day old bread taste better--they didn't have freezers back then. If you bake in the winter, you even get most of the cost of the heat back because it heats your place.
Buying raw ingredients and making it yourself is cheaper in all first world countries. Most of the cost is the 'added value' of making it and the labor. Most people prefer the convenience to the cost and so the market responds accordingly.

Making bread is a joy.. Have you attempted a sourdough starter ? Lots of work, and you have to look after it like a pet.
Nothing beats poached egg on sourdough.

Look in to Tiga and Poolish. Same great taste but done with 18hours ferment at 18 degreesC. You have to use it in an 8 hour window after that or refrigerate and use within 24hrs. Also requires a bit of additional yeast. It’s like a boozy flavour injection! Love taking the lid off and having a whiff!
