Hey hopefully it's ok for me to comment here.
Quick question - are you using a gas or electric stove? I'm stuck with electric, and no matter what I do my steaks never cook through enough. I always have to bake them a bit afterwards, which is a step I would love to avoid.

I have an electric stove and mine always cook through fine. I think a lot of it depends on the thickness. Too thick and you have to be more careful with the heat because they'll burn on the outside and still be rare on the inside.

Thanks, I'll look into thinner cuts then. Because that's exactly what happens to me every time I cook steaks.
And I get pretty excited about what I'm making. So while the post-sear baking shouldn't be a big deal, the additional wait is soul-crushing.

Thinner cuts or just turn the temp down on your stove. You'll still get that nice sear, it will just take longer to get there.
I actually prefer a steak that is a bit thinner myself. I used to buy the super thick ones and i hardly ever got them right. You really have to be on the ball with those.
We like our steak pretty much rare and with a thinner steak all you have to do is let it touch the pan, turn it over and let it touch the pan again. You still hear that faint moo in the back ground and you know it's done. 😀

This could be part of my problem as well. In the past I have been working with thick cuts and high heat, so maybe if reduce both my experience will be better.
I do a meal-prep Sunday thing most weeks, and I thought I was being more efficient by getting the pan really hot. Sounds like the opposite is happening, and it's exacerbating my issue.

This is very timely for me. Even since I got my new range with an in-oven broiler I've been having a terrible time cooking steak and I've been looking for a new method!

My husband prefers a good sirloin because of the slightly higher fat content - the filets we've had haven't had very much marbling at all, and so they come out a bit less exciting than the one in your photo, which looks astonishing.
You shouldn't be cooking any steak past medium, in my opinion.

My method is almost identical to yours! I sometimes do mine in the broiler for the tiniest bit at the end, but that's just because I like oiling the bars of my broiling pan to get those lovely grill marks. Broiling and grilling are very similar, so I find it makes that extra touch possible.
You're spot on with having to have a blazing hot pan first. That was my biggest mistake so many times when I was learning to do steaks in a pan. Growing up, my father always had a grill, so I learned that way!
I also sometimes throw just a tablespoon of whatever wine we're having with dinner in the pan as well, just to deglaze the pan at the end and pour it over husband's steak. He has to have a little something over his steak. Not drowning, because you're absolutely right, you don't want to hide the lovely beef flavour with even the tastiest sauce/demiglaze/whatever, but just a hint can often bring out additional flavour in the meat.

As long as you can get (and keep) your pan hot, a cast iron is not necessary.
Cooking is all about heat transfer. A cast iron pan, (aka a big hunk of metal) acts as a really good heat repository, meaning that once it gets hot, it stays hot, which is an advantage for cooking something like a steak which will cool the pan as heat is transferred from the hot pan to the room-temp meat.
However, cast iron will take a very long time to heat up compared to a copper or anodized aluminum pan.

Cast iron is easy to find and wicked cheap. You can look at the cooking subreddits. They will all tell you that the fancy expensive ones your just paying from brand. Iron is iron. They will also show you how to season the pan and use it and clean it too.

Oi! u/TempestTcup. RPW cast iron lady. Help us out.
As I understand it it is true to a point that iron is iron. However, the antique Griswold and Wagner or superior to todays Lodge. This is because they have been machined smooth. I have both Lodge and Wagner and I will tell you that the Wagner are far more nonstick than any Lodge I have ever used.
You can find them in antique stores, auctions and if you're very lucky garage sales.

I am completely against their way of seasoning, LOL! It forms a crust of old food and industrial seed oils - YUCK! I only use saturated fats in my cast iron and I never season the pan; that's the way people used to use them before all of the vegetable oils gained popularity. If you do it my way (the traditional way lol) you can wash with dish soap and everything. Here's a post I wrote on the subject :)

The ones i have are old but you can get them from flea markets, ebay, etsy, etc. Unless you get a slant griswold they should be about the price of new cast iron. Just look for the smooth milled surface.
But really, I have some newer Lodge with the pebbly surface and they seem fine and non-stick as long as you use plenty of butter, bacon fat, or coconut oil.

See . . . I can't get my Lodge to be nonstick to save my life, no matter how much fat I use. I still use it, but only for things that can stick without mattering. Frying an egg? Forget it. Baking a chicken? Perfect.
Honestly, I think if I just used it regularly it would probably improve greatly, I just haven't made myself patient enough to do it yet.

SEE!!! You need to preseason your pan before you use it. Let me find you a good post about it. Taking care of cast iron is a bit of a pain but once you get the hang of it its actually a lot simpler than most pans.
Or you can not pre-season, not have to take any special care for it, and cook with saturated fats instead of vegetable oils. I am completely against seasoning cast iron!

My husband is very fickle about how food is cooked because as a young adult he managed to give himself food poisoning a few times so now he is always very cautions and over cooks meat. I solved this by having an in oven meat thermometer on our wedding registry. I can't remember the brand off the top of my head - but the goal was that I could temp the meat quickly if it was stove top, grill, or in oven. Since that our food has been much nicer (chicken less dry etc).

It's not cast iron. It look similar to Swiss Diamond but the handle is different.
I think it is non-stick. I do it on my cast iron though and it works the same. I prefer the cast iron though.
Thank you for this guide! I definitely need to up my steak game and all the resources linked in this thread have already helped a ton. I have to say I am a little intimidated by the seasoning process already.

Medium rare master race for life!!!
I usually sear mine in the pan for just a few minutes on each side, then finish in the oven to reach medium rare internal temp. Unfortunately, we live in an apartment that fills with smoke SO quickly and the smoke detectors are ridiculously sensitive on top of that so I can't cook it all the way through in the pan.
Really though, nothing beats steak grilled outside. Bring on grilling season!

That looks amazing, thanks for all the tips! How juicy does it turn out when you cook it to medium? I love mine pretty rare, and my SO loves his medium so I usually try the cast iron to oven method and leave his in the oven for longer.
