Tonight i cup up a box of 22 yellow mangos that will probably get devoured by tmrw night. Dinner my man wanted sandwiches - on mine i put garlic hummus, avocado, brown mustard, red onion, spinach, cilantro, pickles & banana peppers (it was AMAZING). Also made vegan chocolate chip oatmeal cookies. Made my guy a huge fruit salad for the morning (mango, apple, kiwi, blueberry & strawberry) plus cold brew coffee. For my own breakfast tmrw i prepped cinnamon vanilla chia pudding (coconut milk base) with kiwis, mango & blueberries.

Other Recipes i'm planning on making this week based on our current groceries:

Curry (eggplant, potato, onion, coconut milk, yellow curry paste + rice) Banana bread (with walnuts, cinnamon & chocolate chips) Chia pudding & overnight oats varieties Lentil soup

I'm making the first beans and rice recipe on here to wrap up in tortillas with hummus and spinach. Such an easy meal. Also eating up some red pepper barley stew leftovers and making vegan broccoli "cheese" soup tomorrow!

It's my birthday week, so I'm eating out at least twice, if not three times. Making sure my home-cooked meals are all of the healthy-and-make-me-feel-good variety!

My husband and I are doing Whole 30 right now. This will all go out the window Wednesday when I fly home for Mardi Gras (king cake! jambalaya!), but has been fun for the moment.

So far I made:

Apricot-glazed chicken tights over spaghetti squash
Vegetarian spicy curry
Lamb salad with cucumber, tomato, and mint
Pesto eggplant and avocado with tilapia

Tonight I'm doing roasted cauliflower, beet, and heirloom tomato salad!

I will probably make soup today. For the rest of the week it will probably depend on what my cabinet holds. My SO and I will completely overhaul the kitchen as he found the paleo lifestyle and now needs new ingredients - and he fears cheating with the masses of flour, bice, Beans and other kitchen stables still in the cabinets. I will still keep milk and Oats tough as I am not made for paleo;). I was able to find big old Honey Jars wich will keep our dry goods fresh and presentable!

I've been meaning to make a four-hour braised elk roast (based on Ina Garten's 4 hr lamb). It's braised with garlic and white wine and makes even the toughest game fall apart. So tasty! Probably mashed potatoes to go with it. You can do any red meat with this recipe.
