At this point, if it's only been one date, then there's no rush to give him anything physical like a gift.

You don't want to fall into a love bomb or throw one at him. Relax and enjoy what is happening.

Be present, engage in conversation. If he mentions anything that you think may make a cute gift, then make a note of it. You don't need to surprise him with anything right away. I'd suggest anything that feels like it's special to your dating. Like if you both laughed about pistachios multiple times on the first date, then a pistachio themed gift would be special to both of you.

I assume you're expressing emotions so he's probably aware you are having a good time dating him. The best thing you can do is say yes to another date.

Most of all, he is happy to date you, but keep evaluating if you are happy to date him. This is early days and you have plenty of time to get know each other.

I think if you’re sincere, it won’t sound lame. If someone noticed something cool about me on a first date that was more unique than just stereotype or appearance I think I’d like to know.

Don't want to burst your bubble, but you've had one date. I've had countless first dates that were fantastic. It means nothing. Keep your cool and let him continue to prove himself over time. Your company and attention is enough appreciation.

You're getting way ahead of yourself after one date. Cool your jets because you can't remain in control on this trajectory. The guy is one step up from a stranger. Just say " I like this band, thanks for the recommendation".
