It's quite a coincidence but I am basically in a similar but slightly different situation as u/goldenguy2017 (Conflicted about 2 year LTR). I've been dating this 8+ girl for 2.5 years since freshman year of college. Excellent girl, I'm as heavily invested in her family as they are in me, but she wants to get married much sooner than I. She has had a past of texting her ex randomly (maybe 1.5 times/year) and has brought up marriage and is freaked out because I "don't talk about marriage as much as she does" and she doesn't feel like I am sure of her. She let slip that this was "why she was talking to him" recently.

The latest conversation came up after my discovery of her texting him to meet up, but her argument was that she ghosted him on purpose and never ended up meeting (and "didn't plan to"). I am most likely going to med school next fall and she to another grad school a few hours away, and this makes me think we are going along different paths, although I know some people make that work. I told her to go ahead and meet up with him, that I didn't care, and she pleaded by deleting his number as a proof to me (still don't care).

I stumbled across the post the 6 stages of breaking up, and I believe she is getting really worried because of the amount of time spent and the possibility of not getting married. I feel sorry for her.

Anyways, I recently met this smart and funny girl, beautiful and will also likely be accepted to the same medical school.

My question is this: What if I were to ask this girl out for coffee and meet up while in the LTR?

She is aware that I am dating this girl, I know because she mentioned my gf was in "x" sorority without my even mentioning it (stalked my Instagram). So not sure what I would say if calling me on that would be the response to me asking her out, I don't want that to be a red flag to them or anything.

Edit - Also forgot to mention: one roommate is friends with her, and another one moving in next year is dating her younger sister who is also coming to school next year moving in with her. Eyes and ears everywhere.
