Well my preferred outcome would be to keep fucking her, I mean she's a solid 8 with a banging body and it was some great sex. My conclusion is this is a giant shit test on her part, and that I should ignore her and call bullshit. I'm just not gonna talk to her for a couple of weeks and see how that goes.

Yes, it seems a good conclusion. My analysis of historical data suggests an 97.34% probabilityty that this is a shit test. She is probably trying to raise her SMV by forcing you to act on the fact that she is seeing someone.
The moment you're trying to fight for her is the moment you lose, but she still might allow you to enter an exclusive relationship with her. This would be the moment you lose second time. When you're in an exclusive relationship, sex becomes commodity which she has control over.
Ignore, or agree and escalate, and then wait few weeks, see some other people. This sounds like a good course of action. And you've discoverd it yourself. Kudos.

First, don't respond immediately. Wait a few hours or until the next day.
Then go with "k" or "sure." (Avoid "fine." Women say "fine" when things are NOT fine, so she'll misinterpret that.)
Then go radio silent for 3 - 7 days. Then set up another meet and game as usual. If you get stiff-armed, soft next and come back around in 4 - 7 months.

It's a bluff that you have to call, to show her you have other options. Let her go, cut contact, and wait it out a couple of months. Yeah it sucks that you want to keep her around, but that's the way she goes. At least this way she perceives you as having abundance mentality, and there might be a shot with her in the future.
But don't think about her too much, spend your time focusing on other things, girls, hobbies.
