I never advocate for hitting on women that you work with for various reasons, but if you do, I would suggest going about it indirectly. That is, building attraction with her overtime, strictly because this is your place of work.

So, when you speak to her, you need to leave an emotional impact so she will associate good feelings with you and want to talk to you again. One way I like going about this is through being funny, bold, and unpredictable, although there are many ways you can go about stimulating her emotions. The worst thing you can do is be boring. If you are boring, she probably won't want to talk to you again unless she is very physically attracted to you.

It seems as though you all work different shifts, I suggest eventually getting her number, and suggesting you hang out, once you do. You don't formalize it and call it a date, but when you are hanging out with her you are behaving like you would during a date to build attraction. Build attraction, physically escalate, and there you go.

Still, be very careful hitting on women in the workplace. If anything goes down your employer and all employees -- even guys you are friends with -- will immediately take her side even if you did nothing wrong.

Next time you see her you stop her with an "excuse me" and wave your hand, so she can see you. It has to be decisive enough, if she doesn't stop, she probably did not get, that you want to stop her. She can't reject you or blow you out, because she does not know, what you want at this point. So be decisive and loud enough to actually stop her.
It is important to smile to signal to her that you are not a threat (you are still a stranger in her eyes). Many guys forget to do that when they are nervous and come across creepy because of it. It's okay to be nervous, but you have to smile in the first moments of the interaction.
Simply tell her that you noticed her, that she seems like a nice and interesting person and introduce yourself. If she does not react positively you can just eject and wish her a nice day. It will have no negative impact on your future encounters. If she reacts positively you can make a more direct compliment, have a little small talk with her about her day and then invite her for a coffee and go for her number. Wish her a nice day at the end.

If you see her every day smile and say hi to her each day, just create a natural familiarity between the two of you.. Then after a few days say "Hi, I see you every day, what's your name."

Well you can "force" a reaction from her and see what happens - then approach the next day.

Hold eye contact, smile at her (genuinely)

Wink at her

Say hi

Then over the next few days, an approach. Get right to the point because of the work situation.

"Hey. We keep bumping into each other. I'm xxx"

Ask her name

Bit of chit chat

Fancy going out sometime?

Get digits.
