Because you are talking to a woman...there are no rules. Personally I just go with whatever vibe is working, usually a combination of both. It shows that you are a fun guy but interested in her as a person. IMHO.

The point is it doesn't really matter what you say, it's all about the vibe. You can go full interview with a masculine confident vibe and the girl will still be turned on. You can flirt while obviously insecure and it will fail.

Nobody should use "interview mode."

You need a combination of attraction and comfort/rapport. The banter/flirting works with attraction, and good two way conversation helps with rapport. Even then, some people go deeper into rapport than others.
