I feel in the same boat right now, I haven't done a coffee date yet but I've been thinking more and more about it because coffee date will probably be my next date.

Here is what my "plan" is. Remember, don't plan things that's a terrible idea, but have a basic "plan."

Sit next to a window. The reason for this, is Kino is going to be hard sitting down for coffee. When you talk to her, look her straight in the eyes and talk like a man, make sure she's listening, show dominance etc. However, while she's talking, you can take breaks from eye contact, look out the window. Or if there is a little silence look out the window and make an observation. When you make the observation tap her on the hand to get her attention physically, and while making a comment about whatever is outside let your hand linger on hers for a while.
For me personally I have huge hands, and no one I've met yet has hands quite as large as mine, and girls especially generally have smaller hands than men from my experience. I'll somehow have that in the conversation (brought up with some good flow obviously, not out of the blue.) Then put my hand up hers so we can compare. Easy kino. I suggest you find something like this. I also noticed if you accidentally rest your leg or arm on theirs, you can usually leave it there and while it may feel awkward for a few seconds, it eventually creates a level of comfort that you can easily build from. So when you point to something that is outside and touch her hand, feel free to shift your leg and rest it up against hers, she'll be distracted from the talk and your leg will be fine to stay there unless she pulls away.
Leave the coffee shop. Go for a walk and look around at something interesting like a park, cool shop, etc and use the basic Kino of guiding her with your hand on her back etc.

I think really though that you'll have to employ a lot of your conversational skills, for example negging and just being flirty in general.

So I never actually do coffee dates due to the innately implied less chance of an f-close with it being daytime and less sexual tension

Yeah its sad... people never have sex at day time, and they are also never attracted to eachother during the day, its a shame that the human race is nocturnal sexual. Cant change that unfortunately.
