Dude, you are making a big mistake by sounding more interested in a relationship than she is.
Don’t try to rush into a relationship, don’t bring it up, unless she does it first. Women don’t appreciate it when you try to lock her down into a commitment.
Having a relationship should be her idea, she should be the one asking you and wanting it before you offer it.
For now only focus on having sex no matter how many months it takes for her to bring up having a relationship.
Let her be the one that asks you on her own for a relationship. Don’t bring it up ever again.

I said I felt that I liked her enough that it made sense to end things with the other girls I'd been seeing, but she said she felt like it was too soon to do that. I was caught a off guard by this, since the way she looks at me did not at all make me think she was still curious about other men. Clearly, I was wrong.
So basically you were talking about excusivity. Excusivity is not just about seeing other people it's also a status, that consolidates the relationship of you two. So maybe it's not primarly about other people, but about that she does not want to give you the status of exclusivity yet, because it's very close to entering a relationship, if not the same thing. The tactical way to proceed would be to not bring it up again until she brings it up herself. But do you want that scenario? Is she the right woman for you, if she does not even want exclusivity at a point, where you already caught feelings? So the other option would be to talk to her and tell her that you either want excusivity or else it's over.
Maybe "sexual exclusivity" would be a middle ground, a status, where you can get to know other people and meet up with them, but sex is only between the two of you. The whole thing would not be a relationship yet.

I dont think you completely screwed things up, but you're headed that way. Just dial things back and never be the first to bring up emotions or relationship again. Go back to the texting and hanging frequency you were before you caught some feels.
