It seems that you are putting too much attention on that question, it's just probably to make conversation, also that type of conversation (drugs, tattos, pierciengs, sex) sexualize the conversation leading to better results, so if they don't ask those questions you probably should.
And in case its a shit-test there is 3 ways to deal with it:

Accept it (I don't drink because [insert reason for not drinking]) then ask her if she drinks and then move on to the next topic.

Ignore it: (No) Move to the next topic.

Exagerate it: (I only do heroin) Move to the next topic

First, if its legal and your job doesn't have rules against it, and a future job a year out won't be against it, then why haven't you tried weed before? I've only smoked it once, and it was life changing, completely changed my views on drugs, but because of my career I can't use it for 30 years until I retire.

Just say no if thats the truth. Weed is normal and it feels like everyone uses it.

Or when she asks you how hot it is outside are you going to say hmmm how hot should I tell her it is? 50 sounds good for today. Dude just be honest for gods sake. Honestly. It isn't a shit test. I don't want to be with a man who regularly gets drunk/drinks or regularly smokes/is high. I get to define what having your shit together means to me. That isn't in the books for me. That suggests you have a culture you value which I personally find vulgar and annoying in 99% of cases. You ain't it for me, chief. And you should not lie to get further or you are a bad person.

And for the record, there are women who would want that in a partner and would find a man who didn't smoke or drink to be a dealbreaker. And there's stuff in between. We belong with our own kinds.

Don't overthink it. Be honest. You can add a joke in though, for example, if I get asked if I smoke, I say "only churches" (it's funny because I'm a metalhead, and in my native language you use the same word for "to smoke" and "to burn").
