A few pieces of random advice/observations.

Don't judge interest by how much they "talk." If you met a hot chick, would you bore her with tales about your shitty life or would you ask her questions about herself? When a woman wastes too much of my time filibustering, I see someone who doesn't really want to engage with me.
After she ~~said~~ bullshitted you by saying, "I'm busy all week", you could take that a few different ways. Yes, there was a 1% chance that she was booked all fucking week. Or, she could be a Rules Girl who wants to see how hard you'll work. So, what's the proper way to handle that? You tell her that it's on for Monday. No asking, no haggling over scheduling, you force her to respond.
Unless you're taking her to a special event that just happens to be on a Monday (a concert, game etc) then why would you opt for a first date on a Monday?

Don't feel anxious, don't fret but next time think your game through. Besides, you asked a chick out, we're all proud of you. It sounds like her loss.

Sure double texting can be bad, but if that's enough for her to block you then in reality you never had her to begin with. Nothing you can do

Usually I chalk these things up to an ex bf or something else I know nothing about. People's emotions change on a day to day basis so who knows what is going on with her.

The only thing you have control over is your reaction to the situation and you are doing very well. Who knows, maybe in a few weeks or months she'll realize she was a fool and will reach out to you. Don't let anyone convince you that you did something wrong. They likely never actually get laid and only read about theory.
