You are man. I once had my first date with a girl on Valentines day. If you don't make it high pressure, it won't be high pressure.
You don't need to be like, "So its Valentines day next Sunday..." you can just say, "Hey lets do (or lets go to) XYZ this Sunday." you don't even need to say the words "Valentines Day".

If you’re not interested in anything serious I wouldn’t worry about it, if you are I’d just ask her how she feels about Valentine’s Day and whether she wants to do something then next time you see her. She’s probably thinking the exact same thing

I’m seeing a girl for the second time on Thursday (met her this past Saturday). We have good chemistry so I could totally see us still dating 3 weeks from now (I won’t be too bummed if it doesn’t work out).
I already have the idea of saying “fuck that” to the typical romanticized Valentine’s Day. If she asks me what I plan for it I’ll tell her I’m having takeout chinese food, playing board games and watching Netflix.
Honestly there’s no reason to pressure about a fancy dinner or romantic night walk along the water. Just do whatever you want, V-Day is just a dumb holiday anyways.
Like still get her chocolates or flowers or something but the actual day you can do anything you want with her and make it fun. It’s about the time you spend together not the actual shit you do
