Look into David X's material, he has 2 rules, rule#1 who cares what she thinks, rule#2 you are the most important person in the relationship, those 2 rules are all you need for game, right now you're breaking rule 1 by trying to think about what she is thinking by asking how to calibrate to what she wants you to do, you should do what you want to do within the law of course and stop thinking for her.

Submissive - she likes to be dominated, that could mean physically (generally the case), it could also mean in other ways, perhaps verbally or with queus. It really depends

Brat - she likes to throw tantrums and be resistant. Generally in a cutesy childlike manner
