Dude literally just ask. Once picked up my server saying "your number" after she asked me if I needed anything else.

You don’t. At least not when they are working. You could try asking if she has some free time after you have paid for your meal

You flirt with her and see if she reciprocates. Sure she might be going along with the flirting to try and get a better tip out of you but depending on how she reciprocates you should be able to figure out if there's any actual interest. If it's going well, you should soft close date plans. "I'm surprised at how fun you are to talk to. We should get a drink some time." or something adjacent is how I like to transition into soft closing a date after an emotional high point of the conversation. Especially with a service worker, soft closing plans is important to avoid a flaky number/insta being given to you.

I say flirt for sure, then leave your number. Don't just leave your number, build some attraction first.
