I’m a vegetarian and a picky eater. It’s more accepted and understood today than ever before. I never liked dinner as first date and if we do dinner it’s a restaurant I like and have options at. I’m very upfront about my eating habits.

I agree about the dinner on the first date. I only do dinner first dates for novelty, if I'm bored with going to the same cafes or handful of other spots. Even then, I'll do a vegetarian restaurant with low lights, preferably bench seating, and decent enough logistic. (Knowing your logistics, having a few concrete, test options, and having a plan and back ups for dates - major key)
I'm not particularly up front about my diet - it's not that important - , but it's not something I hide or apologize for.
I find that if you hold the frame that your diet is normal, people fall in line. A somewhat firm/dismissive/nonchalant "nah, I don't do that" is often how I respond if a girl unintentionally suggests I eat something like ice cream.

Ya, I definitely agree with that.
But two quick game related points.
If we're hanging out, even as friends and peers, and we go to a restaurant. It's going to be place that has something for me to eat. That's just a matter of courtesy, respect, and in some instances frame.
If you can be a cool vegan, it can send a real strong signal: wow, 'this guy has high personal standards but he doesn't judge other people, he feels secure and comfortable enough in his own choice that he doesn't have to preach about it.'

I haven't met one vegan who wasn't just a emotional condescending fascist trying to silence other people who aren't on their side. Isn't it the foundation of veganism to think he who is living vegan, is living morally right, and all others aren't? Except the very very few people who have to eat vegan for health reasons. Don't get me wrong, i'm open to get corrected, and so far you seem to be level headed about it... but why is it so important for you if there are others vegans here? I don't see many posts asking for "other blacks", "other chinese", "other pizza eaters" and so on.
I am seriously curious about the reasons to that, other than spreading an ideology.

Nearly all restaurants (decent ones) have vegetarian items or can easily make something for you. Its not like Vegans are an oppessed minority these days. They should not act like feminists anymore.
