My advice is not to make it fun per se. Use dates as something to build rapport and attraction for. You' won't have much time to talk intimately during a game of paintball or something. These articles should cover that you need, all are from the same site which I'd recommend to anyone.

Anything can be fun. I once had fun in a bed bath and beyond, then afterwards we went for dinner. I was joking about all the different quirky things for sale at that store and spontaneously making body contact or kissing. I had kissed her when I met her, so that was already established. She absolutely loved the experience. We had sex the next time we hung out.

Rock climbing. Great for trust building, little bit of kino and ample time to chat during breaks followed by food, couple of drinks and a walk for whatever-closing. It has never failed me.
