I used to be vegetarian, so one thing that I particularly liked to make was kind of a Latin cuisine vegetarian dish.

Ingredients were:

Brown rice
Canned or freshly prepared black beans
Salsa - can be mango or peach salsa if you prefer
Cheese - Mozzarella or Pepper jack, if you like it a little spicy
Diced onions
Diced tomatoes

Bring rice to a boil and then let simmer until all water evaporates. In a different pot, bring the beans to a boil, then reduce heat and let simmer. When most of the water has evaporated, add cheese, onions and tomatoes and then stir ingredients together until cheese is melted.

That's basically it, and if you have any other veggies you want to add to the beans, like corn, you can do so.

These also make for awesome vegetarian tacos if you have corn tortillas. Don't forget the guacamole!

Boiled buckwheat.
Ingredients: 5 tablespoons of buckwheat, 1 liter of water, 1/3 tablespoon of salt, some oil.
1. Heat water to boiling point.
2. Put buckwheat and salt in water, leave on the stove for 15 minutes.
3. Pour water away, put buckwheat on plate, season with oil to taste.

Crispy Egg Lava:

At least 2 Eggs
Breadcrumbs
salt
pepper
garlic powder

Boil the egg for like 4-5 minutes. We are aiming for soft boiled eggs in this case.
Peel off the shells.
Crack another raw egg on a bowl and whisk it. Pour some breadcrumbs onto a plate, mix it with salt, pepper, and a pinch of garlic powder.
Coat your boiled egg with the raw egg and then coat it with the breadcrumbs. Freeze it in the freezer for 10 min.
Deep fry the egg.
Serve it with bread/rice/spaghetti agio olio/whatever you want. Cut open the egg from the middle, and watch the egg yolk flowing out from the cracks, like a lava 😋

Crispy Chicken ( no eggs, no frying)

chicken thighs (breast also works, but if you want tenderness, thigh is better)
breadcrumbs
garlic powder
onion powder
salt
pepper
cayenne powder (if you like spicy)

Pre heat the oven to 425 F
Debone the chickens and cut the chicken into smaller pieces. Wash the chicken afterwards.
Pat the chicken so that it is not drenched in water (but not too dry!). Stab the chicken with a fork. Season with salt and pepper.
Prepare the breadcrumbs and put them in a box. Put some salt, pepper, onion powder, garlic powder. Shake the box to ensure the seasonings is spread evenly.
put the chicken in the box and shake it. put it in the baking tray afterwards.
Cook the chicken inside the oven for 25 minutes.
Enjoy, this healthy, crispy meal :)

This is a really easy dip, great for football games:

Ingredients: 8 oz cream cheese

15 oz Hormel chili (without beans!)

8 oz shredded cheese

Melt cream cheese in a glass dish for about twenty seconds, then spread it around evenly as the bottom layer
Add the chili and spread it around evenly as the middle layer
Now add the cheese as the top layer

Now microwave for about 4 min 30 seconds. If it needs extra time, hit it in 30 second bursts

Serve with chips

Carbonated tea recipe!

My old company that I started during my time in University did this and people absolutely loved it. It's a great summer drink. Works best if you have a 5 gallon pot and homebrew equipment.

1 and 1/3 cups of tea per 5 gal of water (which is the size of a corny keg)

Tea blend of 2/3 part peach apricot black loose leaf tea, 1/3 part yerba mate loose leaf (substitute your favorites).

Boil 5 gallons of water. Steep for 5-10 minutes

Add honey to mixture, to taste, and stir in. We used about 360 grams per keg.

Pour into corny keg and let cool overnight. Hook up CO2 tank when the keg is cool.

Put on gas at roughly 30 PSI for two to three days in a fridge.

Lower gas on keg and pour through beer line into either cups or bottles. Bottles should be rated to handle carbonation or consumed quickly. I won't say the name of this company, but that experience was so enjoyable, and that tea was fantastic.

Shirazi Salad

My favorite Persian food, aside from kebab. This recipe was derived from my mom's and grandma's reciple. Mine is a little more savory than theirs.

Juice two lemons, and mix an equal amount of olive oil with the lemon juice in a large bowl. You can adjust to taste, but I generally start even then add olive oil as needed.

Add salt and pepper to the mixture, to taste.

Cut up 1 small red onion, or 1/2 medium red onion, into tiny little pieces.

Add 1 lb of persian cucumbers (the small ones that are more flavorful). Cut them into quarters, long ways, then eighths. Then cut across, into tiny little triangles.

Cut up 1 lb of tomato, diced, and add to mixture.

Chop up one bunch of parsley into tiny pieces.

Mix and serve room temperature for a refreshing Mediterranean salad.

Between these two things and Moscow mules, I tend to be very very happy. I'd add single malt scotch to that, but seeing as I am currently unemployed, I am not going to get into that habit.

Other recipes

Roasted broccoli and/or brussel sprouts

For broccoli, add salt/pepper and olive oil, bake for 35-40 minutes at 425 degrees

For brussel sprouts, same as above, except have first

Oven Roasted Tomatoes

Preheat oven, also to 425.

Halve tomatoes, sprinkle with salt and pepper, drizzle with olive oil, and add fresh grated parmesan cheese. Roast to taste.

Heat up olive oil. Add minced garlic and pan fry momentarily

Add 2 lbs chopped tomato and let simmer for a while (depends on how chunky you want it).

Once broken down, mix in garlic powder, salt, pepper, hot pepper, oregano and basil.

Chop up a box of fresh basil (large box), and stir into mixture for short amount of time.

Serve with a large bowl of pasta.

WestsideMoonwalker's famous salsa

2 lbs diced tomato

5 cloves garlic, minced

4 jalapeno peppers, minced

one small red onion, minced

juice from 2 limes or lemons, choice based on mood

Cilantro to taste, chopped up into small pieces

Salt and pepper to taste

I think that's just about everything for that recipe.

I also make my own taco seasoning when I do Mexican food, and that is great. I just wish that I had more time to make all this delicious stuff.

Of these, my favorites are the tea, because that is something I helped create, and I am a tea snob, and the shirazi, because I love Persian food. Persian cucumbers might not be the easiest to come by sadly.

The only other thing I make somewhat often that I didn't include was stir fry, but that's not my favorite thing to make.

I teach English in China but I will be guest host to their cooking class and show them how to do Eggs Benedict.

The most dead-easy recipes I know are chicken creole and sheppards pie.

For the former, you dump half a can of Hunt's pasta sauce (garlic and herb is the best) into a roasting pan. Then put in chicken breasts (I prefer boneless-skinless, but dealer's choice), then diced potatoes and a package of frozen mixed veg. Then dump the other half of the can of pasta sauce on top. Bake it at 375 for about an hour. You can bake it longer and the chicken will become so tender it melts like candy in your mouth.

Sheppards pie takes a pound of ground beef (yes, I realize the etymology is off) and a can of Campbell's vegetable soup - the "alphaghetti" one. You fry the meat, toss in the soup and then put it in a pan. Then you top it with mashed potatos and then bake the whole thing for about 15 minutes.

Half a kilo salmon
Half a kilo chicken breast

For the sauce - mix sriracha sauce with protein powder until it's as fluid as honey.

Sear the meat. Add the sauce near the end. Serve with brown rice and broccoli.

Spicy orange chocolate molten cake

First put 1/4 cup of white choco chips and 1/2 cup of semi sweet choco chips in a large mixing bowl, float the mixing bowl over a pot of water on med low heat to melt down chips

Now Basically you make a rue with flour and butter in a frying pan 🍳 On medium low heat

Then you add some milk in and stir until the lumps come out of the rue and the milk coagulates into the rue to make some sort of Newtonian fluid

Add that shyt to your mixing bowl of chocolate chips add ground cayan pepper 🌶 I do like two pinches then grate up a teaspoon of 🍊 zest into there too

Mix it up

Beat two egg whites two table spoons of sugar and a pinch of cream of tartar into form whipped peaks not too stiff and fold them into your mixture until all the egg meringue disappears

Butter and sugar frost some baking suffle cups add your mixture and bake for 8-10 minutes at 400 degrees

For chocolate chip cookies that are gooey and flavourful, add about two tablespoons of corn syrup. If you want to create a maple chocolate chip cookie, substitute maple syrup for corn syrup and maple sugar for brown sugar. It makes amazing cookies and I can post a full recipe for the ratios if people would like.

Spanish potatoe tortillas

a few potatoes (enough to fill a small pan with them)
4 eggs
2-3 spoons of flour (any flour, though wheat is the best; already tried corn flour and it was sub-par)
olive oil
seasoning (salt, pepper, herbs, garlic)
water

If you want to improve the tortilla, you can add some or all of the following:

bacon or smoked ham
onions
olives
cheese

Slice the potatoes, season them, roast them in a pan. If you have onions, olives and/or bacon/ham, throw them in as well.

Prepare a pancake dough (mix the flour with a bit of water, add the eggs, mix it until you have one reasonably liquid mass). If you have cheese, prepare it (slice it, dice it or grind it).

Once the potato-mishmash is ready, mix them with the dough (and the cheese).

Pour more oil into the frying pan and the whole mass on top of it. Bake it until it takes on a more solid consistency. Once this is done, put an inverted plate on the pan, turn it around and remove the pan - if you've done it properly, the pancake should now be on the plate without anything sticking to the pan. Now slide the pancake back into the pan, with the raw side at the bottom. Bake 1-2 more minutes. Done.

My favourite Pad Thai recipe. Serves 2-4 depending on portion sizes.

Ingredients:

1 red onion chopped

1 carrot grated

Half a pack of tofu, cut into chunks

~12 cherry tomatoes halved

As much garlic as you like

Pad Thai noodles, put to soak in water for a few minutes

2 tsp of sugar

Lots of soy sauce

2 handfuls of veg chopped (I like mange tout and baby corn, but you can use whatever)

1 lime

Chilli

A handful of cashews (roasted)

Oil a wok and fry the tofu until cooked
Add the onion, carrot, tomatoes and garlic. Fry for a few minutes
Add the noodles and mix well
Add the sugar, soy sauce and veg
Stir regularly until all cooked (less than 10 minutes)
Add the chill, lime juice and cashews
